A whole cow purchase can save upwards of $1000 the cost of purchasing the same weight of beef in individual cuts over time. Our bulk prices are extremely low, and a walk to the freezer is much quicker than a trip to the grocery store.
Where will my beef come from?
Nieslanik Beef’s whole and half cow sales all come from Local Colorado cattle. The cows spend the summer season grazing the high country above Carbondale, Meeker and Steamboat CO. They come home happy and healthy each fall.
Pricing
Our pricing is based on the hanging weight each cow. Hanging weight is the weight of the cow as it hangs in the butcher's cooler once the head, hide, feet, organs and blood are removed. For our cattle, hanging weight averages 800 pounds but varies by individual cow. We charge $7.10 per pound of hanging weight. An individual cow's hanging weight, and the final price, are determined at processing.
To reserve an order, we ask that customers pay a deposit. Deposit amounts are as follows: $1,500 for whole cow, $1,000 for half cow. The deposit is a down payment toward the total cost. Total cost varies due to weight.
Each customer’s final balance is determined at the time of processing. The final balance is the difference between the hanging weight-based price (at a rate of $7.10 per pound), and the deposit previously paid. The final balance must be paid at the time the beef is picked up or delivered.
What’s included?
We offer customized whole and half cow purchases. Our prices include all processing and butchering into individual cuts. Individual cuts are packaged (plastic wrapped), USDA inspected, and frozen. A Nieslanik Beef team member will get directly in touch with each customer to optimize their order and send it to Fitch Processing in Craig, CO.

Nieslanik Beef will help you understand the options. Quantities and availability of specific individual cuts will vary from cow to cow.
Payment
We accept cash (in-person), check (by mail), or credit cards (over the phone). Once you place your order, we will confirm our inventory and respond within 3 business days. Please allow us to confirm availability prior to submitting any payment.
Pick-up or Delivery
All whole and half cow orders can be picked up at our ranch (in Carbondale, CO). All pickup dates will be scheduled with individual customers at the time their cow is processed. Delivery is available and delivery fee will be assessed due to location. We are unable to return deposits for orders that are not picked up or delivered.
